Margarita Cake



You heard me correctly!  This is my favorite cake.  In college instead of buying alcohol to drink, we bought alcohol to bake and this was one of the recipes we made. 

I made this cake to celebrate my mom's birthday today.  Happy Birthday Mom!


 
Combine all of the ingredients in your mixer.




Spray and flour the pan.  This does both of the steps at the same time.



Bake the cake for 45- 50 minutes at 350.



Mix your ingredients for the glaze in a separate bowl.



The cake is done and cooling on a plate.


Poke it with a fork to allow the glaze to get in the cake.


Drizzle the glaze on the cake after it is almost cooled

I always like to make extra glaze for when you serve the cake.

Ingredients
1 (18.25 ounce) package pineapple cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1/2 cup vegetable oil
2/3 cup water
1/4 cup lemon or lime  juice
1/4 cup tequila
2 tablespoons triple sec liqueur

Glaze
1 cup confectioners' sugar
1 tablespoon tequila
2 tablespoons triple sec liqueur
2 tablespoons lime juice

Directions
  1. Preheat oven to 350 degrees.  Grease and flour a bundt pan.
  2. In a mixer combine cake mix, pudding, eggs, oil, water, lemon juice, 1/4 C tequila and 2 tbl triple sec.  Beat until smooth.
  3. Pour batter into pan.  Baked in oven 45-50 minutes.  Cool for 10 minutes.  Turn over and place on a plate(you may have to help it slide out).
  4. To make the glaze: In a small bowl, combine confectioners' sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.
  5. I wait to put on the glaze until the cake is almost cooled off.  You can stab a few holes in the top with a fork.  Put on a little icing at a time to let it soak in.  (I often make extra glaze to pour on top of the individual pieces when served).
