Mexican Breakfast Burrito Casserole

I love breakfast burritos from McDonald's.  They are so good!  I have made a healthier rendition at home that you can prepare the night before.  This is a perfect casserole when you have guests over.






1 pkg spicy sausage, cooked and crumbled
1 bell pepper sliced or diced (or bits of different colors)
8 green onions, diced
1/2 cup salsa
2 cups shredded cheddar cheese
10 eight-inch flour tortillas
6 eggs
2 cups of half-and-half
1 Tbsp flour
diced jalapenos

Spray a 9x13 pan with cooking spray
In a large bowl stir sausage, pepper, onions, salsa and one cup of cheese.
Place 1/3 cup of the mixture in each tortilla.  Roll them up tightly and place them in the baking dish.  Seam side down so they do not open.






In the same bowl, mix eggs half-and-half and flour.  Pour over tortillas.













You can bake this now or put in the refrigerator overnight.

Baking Instructions
Heat oven to 350 degrees.
Cover the burritos with remaining cheese and sprinkle a few diced jalapenos on top.
Cover with foil and bake 35 minutes.
Uncover and bake for another 15 minutes (or cheese is melted).
I served it with my homemade enchilada sauce.
